Pecan Date Bar

Today is National Pie Day and I have a great recipe for a yummy, healthier version of pecan pie.  Once you’ve had this you won’t miss that sweet confection. When I went gluten/wheat free a few months ago I felt like I was going to miss out on all the goodness that gluten provides.  I had tried a few store bought cookies and items and was very disappointed with the lack of moisture, weird after taste and all together lack of flavor.  Like everything now I had to go gluten/wheat free and start making things from scratch. If you have read previous “Mealtime Monday’s” you know that I am always experimenting. This time I wanted to use up the last of the Medjool dates that I had.  I recently started baking with Medjool dates and they are a great sweet alternative to refined white sugar.  My family is starting to really become a fan and the baby loves these as a treat now so I have to keep them hidden.

While scrolling through Pinterest I came across a Oat Date bar that of course had whole wheat flour and it was just Oats and Dates which seemed a little boring to me. So, after some adjustments I came up with this really yummy gluten free alternative.  There really moist, just enough sweetness and will have you wanting more.  I added Pecans because I thought it would be a welcomed flavor and came up with these magical bars.  I would say if there is someone with a nut allergy just omit the Pecans and you’re good to go. These bars are a great source for natural energy too and add in some dried fruit, chocolate chips and give yourself even more variety. One tip, store these in a Air Tight Container and keep cool. The coconut oil will make these really soft if left out too long.

I am so glad that there are so many alternative flours you can use now other than whole wheat.  I know going from what you are used to and changing up your diet can be really stressful and hard but here I am a few months later and I am not missing my wheat.  Sometimes it’s hard to eat out but for the most part I find it a pretty easy transition.  If you’re making the switch to gluten free hang in there you will get used to it soon! If you’ve been living this life not as a fad diet but as an actual health issue for many years and just need another tasty to add to your repertoire, well here you go! Either way, I hope you enjoy!

Pecan Chai Date Bars

Prep Time: 20 minutes

Cook Time: 45 minutes

Pecan Chai Date Bars

Ingredients

  • 1 1/2 c. Medjool Dates
  • 1 1/2c. Water
  • 2 tsp. Vanilla Extract
  • 3/4c. Coconut Oil, Solid
  • 1c. Rolled Oats
  • 1 1/2c Oat Flour
  • 2 Tbsp. Chai Spice*
  • 1c. Coconut Palm Sugar,brown
  • 1/2 tsp. baking soda
  • 1/2 tsp salt
  • 1c. Pecans, chopped

Instructions

  1. Preheat oven to 350 degrees
  2. Line 16x9 Brownie Pan w/parchment paper & grease paper w/coconut oil or cooking spray
  3. Put measured coconut oil in the freezer for 15 to 20 minutes until it becomes solid all of the way through.
  4. Put water in saucepan over medium high heat & allow to reach just a simmer. Add dates and lower heat to medium low. Cook until a paste is formed, for about 10 minutes. Allow to cool to room temperatures. Add vanilla and 1 tbsp. Chai Spice and Stir.
  5. Meanwhile, combine all dry ingredients and remaining tbsp of Chai Spice in a large bowl.
  6. Dice solid coconut oil to form small dime size chunks.
  7. Add coconut oil to dry ingredient and combine with hands (or masher...that's what I did) to form lumpy, moist crust. (This crust is great for a crumble topping too)
  8. Add half of the oat crust mixture to bottom of baking pan and press with hands to flatten evenly.
  9. Spread the date paste in a even layer over the crust.
  10. Sprinkle cup or chopped pecans on top of date paste.
  11. Add topping, gently flattening with hands. Bake until golden brown, about 35 to 45 minutes. Allow to cool cut into squares to serve.

Chai Spice 1 1/2 tsp of Ground Cardamom 1 1/2 tsp of Ground Cinnamon 1/4 tsp of Ground cloves 1/4 tsp of Ground allspice 1/4 tsp of Ground ginger 1/8 tsp of Ground nutmeg Mix together in glass jar, air tight container or bag

5 Habits Mom’s do to derail progress

I made a delicious, nutritious, and fat loss friendly meal for breakfast. Nothing extravagant Apple Chai (Sugar Free) Oatmeal and Hard boiled Eggs.  Something very simple after an intense workout. Ate my serving, that was measured out and a perfect portion, then I did the unthinkable. A habit that I have had since my lil diva’s started eating table food. I am usually mindful but you know how things go, sometimes you slip back into old habits. So, what did I do that is so heinous? As I am clearing the table, I…..yes, I did it. I scarfed down the leftover food from my littlest diva’s plate. (The horror-insert scared emoji here) I went from being completely satisfied with my meal, portion, and calories being in a healthy range. To the feeling of being stuffed and adding probably a good 100-200 calories extra to my meal, (maybe less) which I can’t totally calculate because I didn’t measure out my child’s leftovers. Now, am I going to totally freak out and do more pushups, jumping jacks, and burpees. Um, no I am way to worn out for that. Thank God there is such a thing as grace. But, I am going to be mindful that these bad habits although innocent is little things that make it harder for me to get to my goal. A healthier, physically fit body. That I work very hard on 30 minutes a day 4 days a week. While doing dishes I was thinking, “I know other mother’s do the same thing but I wonder how many innocent habits do we do that hamper our progress?” I came up with five and I would love for you to add more that I don’t think about and maybe not even aware of that these little nuances exist. Pointing them out will help us to stay focused and not derail our hard efforts. Time and pushups are very valuable things to me and if I can reduce both that is a good thing.

5 Habits Mom do to derail progress

  1. Eating remaining food off your children’s plate. Let’s start with today’s offender. I try to be mindful of this but being the overseer of our food budget and working hard to provided nutritious meals for my family. When I see perfectly good food on its way to the trash my first instinct is to just eat it. You know the saying, “there are poor children starving in Africa.” My instinct to save the waste is counterproductive to my goal to live a healthier lifestyle. Those little bit of calories can add up, considering you feed your children 3-5 times a day. A great solution is to serve your children less. They can always get more and that way they are not wasting as much food and you are not adding to your daily intake by saving food from the trash.
  2. Not sitting down to eat. Again, most of these are just going to be my confession. Up until recently especially in the morning before school. I would eat on the go and have my children sit at the table for breakfast, lunch and I usually sit down during dinner. But, sometimes I am trying to throw something in my mouth and tackle, chores, phone calls, or something while I have them sitting there quietly (somewhat) eating a meal. This too allows you to make poor food choices, portion control and just add unnecessary stress. Sit down, chill, enjoy the meal you have prepared and take a little time out in your day to talk with your children. Teaching moments of “abc’s” or just to sit for 10-20 minutes. This can help reduce your stress which helps reduce your cortisol so, it’s a triple win; Stress reducer, nourishment and calorie control.
  3. Don’t drink enough water. I am in that weird mom stage, I am either on the go with my two older school age children or I am on alert with a very curious toddler. Regardless, I am not attentive to my own needs most of the time. Somedays, I am just on auto pilot getting through the to-do’s of the day. We are supposed to drink half our weight in ounces of water. If I am conscious I am doing that but that requires lots of fill ups and lots of pit stops, if you know what I am saying. But, proper hydration is key to good nutrition so it is something that must be added to the to-do list until, it becomes a great habit.
  4. Don’t make time to workout. Again, this was a mistake of mine. So, beginning of 2015 I had the best intentions. Gym membership, resolution motivation and a 6 month old baby and two active lil school aged divas. My husband works most of the time so, although I intentionally signed up with a 24-hour gym I never seemed to make it in there at all within 24-hours. I am just hanging on by a prayer after 8 pm when my husband usually comes home during basketball season, so night time workout don’t work. Although, I get up at five in the morning for devotion. The idea of getting up at 4 am to devote and then workout seemed like pure insanity to me. I think it would be safe to say that as a mother we do not always prioritize ourselves in life. That is a mistake. We need to take care of ourselves. Physical inactivity leads to so many things that cause us to poorly do our job. Small things like lack in energy, poor immune system; To big things like stroke, obesity, diabetes and other life threatening ailments. We must be active for at least 150 hours per week according to the American Center for Disease Control, however you break that down in your week. It’s a must! So, not adding your time to devote (I find that essential in self-care and honoring your temple) and exercise is a major no, no to weight loss and a healthy lifestyle.

5. Rely on your self.

How do you do better?

The second best thing I ever did for myself was canceled my gym membership, invested in weights and found an awesome workout that could be done in less than 30 minutes.  It has double the benefits of going to the gym, an hour of cardio, or an hour workout DVD. If you have an hour of to devote to working out make sure you schedule it in and pop in that DVD. Whatever you do get your 150 hours a week in any way that you can. With kids, without kids but just honor your temple with intentionally avoiding habits and mistakes that you have become accustomed to. I know that I am doing it and although the journey is not as fast as I like, “if I stop now, I will soon be back where I started, 40 pounds heavier, 56 more inches wider. And when I started, I was desperately wishing I could be where I am now.”

The best thing that I did to help me see my mistakes and have strength to change them was bring my goal to live better and healthier to God.  After trying too long and too hard I gave it to Him and He has helped me overcome so much. Even though old ugly habits will rear there heads. I was able to instantly recognize it and now will make a conscious effort to overcome it.

Be strong and courageous! Do not be afraid of them! The Lord your God will goes ahead of you. He will neither fail you nor forsake you. Deuteronomy 31:6

I know I am not crossing a river to go into warfare but I am going into battle with my own sinful nature. And the ways that I have become accustomed and where I am trying to do better in my life. ProYo Banana Pudding Yogurt Cakes

I am one who firmly believes that other than your birthday it should only be an adults right to have cake for breakfast. Unless, they are frozen yogurt cakes. Frozen yogurt cakes are yummy single serve frozen yogurts that you can load with toppings, cookies, or whatever on the bottom and and add yogurt for the “cake” flip it over and it’s a Upside Down Frozen Yogurt Treat!  It’s hard to find a good frozen yogurt like everything something that was supposed to be a healthier alternative can now be considered as sugary over indulgence. I’ve stumbled upon a Yummy Protein Frozen Yogurt that will meat your ice cream craving.

ProYo is a new yummy treat that my family cannot get enough! Before ProYo came to my house they would go through quart after quart of ice cream.  I say they because I couldn’t eat it with my dairy sensitivities BUT then there came ProYo and now I can indulge too.  When I say indulge it really isn’t a guilty pleasure because it’s actually pretty nutrient dense for a frozen treat; containing cultured probiotics, 15 g of Carbs, 20g of Protein and 2 g of fat! They are junk free treats which is very important to me Soy Free, Gluten Free, GMO free, Yep! These bad boys totally fit into my macros seamlessly.  They also have are diabetic friendly testing at a glycemic level of 27 and taste like creamy homemade ice cream. They are so good. I have had protein frozen yogurt that has that weird protein taste and not with these. You wouldn’t even know there was protein in them.

I like to try new things so I saw someone make a “yogurt cake” on IG and I of course went to waste time on Pinterest.  After many variations and sips of water to ward off the craving I decided to give it a try with my ProYo for a  different dessert! THEN I had a brilliant idea to try these yummy raw cookies that I make from my favorite Sweets in the Raw by Laura Marquis. It’s a no sugar added, sugar free, raw sweets cookbook of really easy delicious recipes with affordable ingredients.  So, I made the Chocolate Chip Cookies and the Vanilla Bean Macaroons to place on the bottom and they turned out amazing. The Banana takes like Banana Pudding which is a favorite treat of mine and also the recipe. You can have this for Breakfast, Snack or dessert and you are going to be getting the Protein, Fiber, Pre and Probiotics that your tummy needs to start or end your day.  ProYo just in the tube is great for post workout snack.  If you want to find ProYo at your local grocers check it out here and let me know what you think?

No Bake Banana Pudding Yogurt Cakes

Yield: 3 cakes

No Bake Banana Pudding Yogurt Cakes

Ingredients

  • 1 Tube of Vanilla Bean ProYo, softened (not melted)
  • 1 Tube of Banana ProYo, softened (not melted)
  • "Cake"
  • 3/4 c unsweetened shredded coconut
  • 1 tsp Vanilla Extract
  • 1 tbsp. Coconut oil melted
  • 1 tbsp. Date paste
  • 1/4 tsp sea salt (not optional)

Instructions

  1. Place Cup cake liners in cupcake tin (preferably Silicone Cupcake Liners. Paper make stick to frozen yogurt
  2. Pulse in food processor till well blended but still chunky
  3. Mash 2-3 tbsp of mix into the bottom of cupcake liner
  4. fill with Banana ProYo 2/3 to top
  5. fill with Vanilla Bean ProYo 1/3 top
  6. Freeze for 30 minutes
  7. Enjoy

Yesterday, we talked about the anticipation of Immanuel, Our Savior to be born. What does it mean for Christ to be born? Since we already have seen the effects of his birth, this is not a trick question but mostly a question to insight, “Why are we celebrating Christmas?” I think modern day society we take the conveniences of life for granted. Often taking and never considering how it was given to us and why. Salvation is often taken for granted which I feel disappointing. We were given salvation through the birth and death of Christ and too often once we accept Christ we feel like that is a confirmation of our place in eternity. It is so much more than that it’s not a one-time deal but an on going relationship with Christ and duty or obligation to not only represent Christ here on earth but to bring others to him. Eliminating the dividing walls and show the peace and love that Christ has shown us.

Ephesians 2:14, iterates Jesus uniting the Gentiles and Jews, breaking down barriers and unifying all of the humanity. This year alone our country has been divided, our world at odds with each other. Jesus was sent here to make us all one under His love, protection, mercy and grace. Jesus is the only way to have peace here on earth. If we could all be at peace with God, then we could see peace in our cities, nations, and worlds.

Be transformed by His goodness and “let peace rule inside you no matter what’s happening on the outside,” – Pastor Andrew Bonaventura.

Today’s Challenge Exercise is Mountain Climbers:

Mountain Climbers can be challenging and admittedly my least favorite exercise. Just because you don’t like it doesn’t mean you shouldn’t do it. Mountain climbers are and excellent full body workout it engages most muscles in your body resulting in burning more calories in less time. Don’t we all want that? Mountain Climbers can be performed anywhere because you just need enough space for your body size. Lots of benefits to this exercise but it provides muscular and cardiovascular fitness while also improving flexibility, blood circulation, and overall strength.

Are you making the most of your Xfinity Service?

We are officially in the Holiday Season

Would you consider us early in the Holiday Season or the middle? For me, it’s just beginning. I am looking forward to our annual Gingerbread house and cookie decorating this weekend. I finished my shopping the Friday before Thanksgiving. Unfortunately, I missed all those really good sales. I am also still in school almost half way done and still a mom of three little girls and now a wife to a Teacher AND Highschool Basketball Coach, so things have been busy despite my efforts to have a “memorable not stressful” holiday season. Yes, I did say that a few months goals. I have big dreams! Going to be a fun Christmas this year with my girls.

Who knew I could run and errand and getaway?

I had the opportunity to check out the new Xfinity Store near me. Like, WOW! Have you been to a new one yet? There are lots of new convenient locations available. I could totally de-stress and wait my turn in there for a few hours, but you know longer have to wait in that line with all your wires and equipment. They take it from you right as you enter the door and enter you into their queuing system. Allowing you to explore as you wait your turn for a customer agent if you even have to wait because they have increased their staff as well, so there usually is little to no wait. A vast improvement on the days with the glass windows and paper ticket.

While you’re waiting you can touch and explore the services with guided demos, flat screen tvs and Ipads with a comfortable seating area. There also so time saving features if you’re not like me and you’re looking to get in and out with self-serve bill pay kiosk.

Reading is Fundamental

Although, the Store is a different experience the new X1 service is also making it a lot easier to manage and use your Cable, the Internet, Phone and Home Security Service. I currently only have Internet Service through Xfinity. By spending some time in the Xfinity Store (which can be my new getaway from the kid’s spot). I learned so many things that came with my service that they probably explained in that little booklet you get when you sign up, but I pay no attention to those little booklets so for those who do stay informed this may not interest you. For those like me who have the service and just know where the password is for the WiFi, I learned some great features you get with Xfinity Internet that you may not know of and are FREE!

Did you know? Comcast has improved their customer service? Creating new customer service centers, staffing more agents, and having troubleshooting features included as easy as your remote control you should be able to have your issue fixed within minutes and if not, you can schedule your own time when you want a technician to come to your home from an app on your phone.

Did you know? You can schedule On-Demand, Download and take with your shows, and movies for access without WiFi and control your child on the internet all from your phone? Well, you can.

Did you know? You can take users off of your WiFi or block access at a particular time from your phone and even if you’re not home. The most underutilized app that Xfinity has is their My Account App which allows Parental and Admin controls for your internet and television.

Did you know? There are multiple ways that you can protect your children without physically being there. From Internet access to their X1 Kid zone which requires a Parent Code to get out of the channel lineup preventing your kids from finding anything that is not aged appropriate. According to Comcast, ” Kid Zone is a safe and secure place for kids to independently explore their favorite content and discover new programming.” They also have “Common Sense Media integrated ratings and reviews that help parents determine what content is appropriate for different ages.

Did you know? The new X1 search filters specific age ranges if you prefer. The X1 has infinite amount Integrated Xfinity apps that allow you to find something for anyone just from using the Voice Remote and speaking thinks like “Find today’s Top 100 shows” and like “Siri” or any other voice command the options of media is for your viewing pleasure.

Did you know? Xfinity and Netflix have partnered together, and you no longer need to stream NetFlix you can find it in your X1 Cable Box. You are able to access Netflix catalog of TV shows and movies in your X1 live, On Demand, DVR and web programming. It’s just added to your cable bill and you can find it all in one place. You can also access NetFlix movies through your Voice Command feature on your Xfinity remote control. So cool!

How did they change their service?

The cloud!  X1 DVR with cloud technology. According to Xfinity, “lets you stream DVR recordings and live television on mobile devices.” They are cloud based now allowing them to make updates faster, share and offer the best value. Although Comcast is not the lowest price it is the best value and you get a lot more with your services than just with live home television watching needs. It was great learning all the new things are happening with Xfinity.
