Yummy, Protein Strawberry ShortCake

Yep, I did it! I made a yummy Strawberry Shortcake after several failed attempts. I love Strawberry Shortcake when I was pregnant with my third I would call Cheesecake Factory 20 minutes before my husband got off work so it would be ready for him to pick up just as he passed it driving home. I specially requested everything in individual containers, and when he came back, I would welcome my Sweet delicious Strawberry Shortcake and then my sweet husband for giving in to my pregnant cravings. Although I really can’t blame that on pregnancy because I still crave Cheesecake Factory Strawberry Shortcake, there are several problems with it now...

Cranberry-Orange Yogurt Cookies

Cranberry-Orange (1)

Another, kitchen experiment from lack of ingredients and a little snowed in boredom.  My lil diva’s love to do craft, cook, play games. After a four day weekend all of those things were exhausted with the exception of baking.  We had almost made it through the entire weekend without indulging. Since, beginning this weight loss journey I have been making a lot of lifestyle changes.  Trying to be wheat and gluten free due to sensitivities, drastically reducing the amount of processed sugar my family and I consume and showing my girls that healthy eating does not mean lack of flavor and treats.  So, when I ran out of all other ideas I turned to my favorite cookbook, social media...

Mango Thai Chicken Salad with Spicy Peanut Sauce

mango thai chicken salad

I used to be a plain salad, same salad kind of girl. I would get your standard mixed green or Ceasar Salad.  Then I began eating more protein and produce and before I found all that variety had to offer I got stuck in the same salad rut.  Funny enough my husband who is a same meal kind of guy. Like when I met him he would only eat “American” food defined by him as Hamburgers, Spaghetti (Technically not American) and Fried Chicken.  Anyways, he introduced me to adding fruit into my salad. He used to put strawberries, grapes, blackberries, apples and I thought “Eew, how gross” well you know the adage-Don’t knock it till you try it. Well I was pleasantly surprised. Now I am livening my salads up with different types of nuts, cheese, fruits, and dressings...

Back to School, YAY!

How were you the first week of school? For some of you, it’s been a few weeks and you probably have settled back into a routine and life is starting to take on its new normal for the next 8+ months.  For us Jersey peeps we have just finished up the hours long paperwork confirming that are a child is still the same child, with the same parents, living in the same house just another grade older.  After school activities have taken our chill summer nights away and we are anticipating the homework to come trickling in to add to our now more full to do list.  Oh, what happened to those preschool days where you just had to make sure they had a change of clothes and snacks.  My girls are now in third and seventh grade, and I remember from my now seventh grader...

ProteinPancakes

Pancakes, Bacon, and Eggs are like our Saturday morning go-to. I usually make a double batch on the weekend and freeze them for the oil diva’s breakfast during the week. I place each one in between parchment paper, so they are easy to pull out and toast just like your convenient frozen pancakes already made in the store. It allows me time in the morning to provide them with a homemade breakfast in minutes.

I have never really liked pancakes, but my daughters do. After flipping pancake after pancake and not being able to indulge in anything with wheat, guess what I want, crave, obsess? Yes, pancakes. You always want what you can’t have well not anymore. These pancakes are so easy to make, delicious and don’t add extra time and a whole lot of ingredients to your regular breakfast routine...

Lately, all I have been posting is recipes and this blog is about food but not exclusively.  It’s just been a very busy season lately. Needless to say my thoughts, although I still have them have been fleeting and I have no time to capture them and post but I am working on it.   I still have time to dabble in the kitchen though and recipes are just easier to post then thought provoking inspirational post...

No Carb Cheesecake

My Full Disclosure Policy

No Carb Cheesecake

I have been carb cycling for 3 weeks this month and if you have been following have found some yummy recipes. I am actually in love with this type of meal plan now. I have found that it has given me amazing results, physically and internally. The first week I had to tweak my macros, meaning the amount of protein, fats and vegetables/fruits that I consumed and types.  Once I figured it out not only have I felt better than ever, I find myself eating more than ever. Yet, I am eating less calories and low carbs.  I have played with my meal plan schedule varying week to week.

For example, my first week I ate:

Low Carb, Low Carb, No Carb, Low Carb, No Carb, Low Carb, High Carb. I did this to ease me into this new lifestyle change.

The Second week, I started off wit...

Fat Loss Friendly Butter Rum Cupcakes

ButterRumCupcake

I have been on a sugar detox for 14 days and being sugar free can make a girl do some crazy things ie. create a sugar free cupcake out of desperation for a after dinner treat. Detoxing has been extremely hard because there is sugar in everything. Things that you didn’t expect to have sugar in them there is. Of course, I know there is sugar in cupcakes, that’s why I love cupcakes. I have found doing this detox that sugar does have a mental and physical effect on me. The first two days, I had cravings and would end my days with headaches, which I don’t get. A week into the detox I had a really emotional down spell for several days being that I am a pretty optimistic person this was very challenging. Then the stuffy sinus’ and increased allergies...
