Mug cake is great when you want something sweet but not to much and a really quick fix. I totally blame it on the time change but in the fall I want to bake but I have been working really hard to lose weight but a girl gotta have her pumpkin. Since it is rich in Vitamin A I think that is an excuse to try to make it a healthy treat. So, I went to Pinterest but couldn’t find exactly what I was looking for so I had to go to the laboratory also known as my outdated (but soon to be updated) With my lil diva’s helping me brainstorm we came up with a super yummy not to bad for your weightloss treat.

“Fat-Loss Friendly” Pumpkin Pecan Spice Mug Cake


  • Coconut Oil
  • 1 egg, beaten
  • 1 tbsp of stevia (or brown sugar if you're not watching your weight like me)
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1 heaping tablespoon of gluten free oat flour (I used graham flour for the divas)
  • 2 tbsp of pumpkin puree (be strict with this don't eyeball it or you will have a gooey cake, trust me from experience)
  • 1 tsp of vanilla or more (I LOVE Vanilla)
  • 1/4 tsp of pumpkin spice
  • 1/4 tsp of cinnamon
  • pinch of nutmeg
  • pinch of salt
  • pinch of ground clove
  • 1 tsp of apple cider vinegar
  • *add pecans about 2 tbsp or chocolate chips (another lil diva addition)


  1. Grease mug with coconut oil
  2. Dump all the ingredients in order
  3. Stir till mixed
  4. Microwave for 30-90 seconds depending on the strength of your microwave. I did it at 30 second increments until it wasn't too gooey in the center
  5. Scrape the sides and flip over on plate
  6. You can drizzle with maple syrup, chocolate syrup, powdered sugar. Unfortunately, I can't afford such luxuries I am working too hard on my fitness to sabotage myself 😉 😉
