Living the GF Life

faithfueledfeature

Okay, guys! I may be going all into living this gluten free life.  Seven months ago I was tested for my allergies and among the seasonal allergies that I already knew of wheat and peas was one of the allergic reactions I had.  When I was in my teens, I had an allergy test with the same results but didn’t think anything of it. When I was 16, I didn’t care about my allergies and until that day didn’t realize the effect of ignoring my allergy had on my body.  I used to say regularly, “My stomach hates me,” after every meal.  I would get horrible headaches, itchy scratchy throat, constant post nasal drip always clearing my throat.  I always associated the throat and nasal to my known indoor/outdoor allergies.  I never thought it could be from the things I was eating...

Apple Crisp for 1, please

Meal Time Monday [Autosaved]

Yep, It’s that time of year! Apple Picking! It brings back so much nostalgia and memories and a tradition that I happily keep each year with my girls.  It’s been especially fun the last two years apple picking with a curious toddler.  The older girls make it fun too but those little eyes of amazement and little hands stuffing apples in a bag melts this Mama’s heart.

I know everyone has gone Pumpkin crazy but we can’t forget about, good ole American apple pie.  I am a huge fan of both Pumpkin and apple so this recipe actually works for both! It takes 2-5 minutes and you will be in that fall-warmth-comfort-food-bliss in less than 10 minutes and it is so much better for you!

There are so many to both as a snack!

My New Quirky Habit

I have this new quirk, and my husband had to point it out to me. I like eating fancy food. From creating blog and Instagram post I now pretty much style all my meals. Healthy food just tastes better when designed in my opinion, and it’s a part of the food experience. Before I became a health nut, the food experience consisted of a greasy bag, lots of napkins and a stain every single time on my shirt. It was usually eaten in the car, in a hurry, on-the-go and the most memorable thing about the experience are the stains it left on my shirt.

Powered By Protein

Meal Time Monday [Autosaved] plant-basedproteinroundup

When I first started my weight loss journey I was introduced to protein shakes. I wasn’t aware of all the options and drank what was recommended. After about a month I knew I had to try something different but didn’t know what to choose out of all of the many. A year later I have not only a great understanding of the value of protein powders in your diet. I have some recommendations. Protein powders are a great addition to your diet because:

• They are a convenient, high-protein, take anywhere food similar to meats, fish, eggs and dairy but can nonperishable in the powder form.
• They are a great healthy fat containing very little fat and are usually cholesterol free which is hard to find in a high-protein food
• They can be used for the entire family
• A bonus to all of these...

Back to School, YAY!

How were you the first week of school? For some of you, it’s been a few weeks and you probably have settled back into a routine and life is starting to take on its new normal for the next 8+ months.  For us Jersey peeps we have just finished up the hours long paperwork confirming that are a child is still the same child, with the same parents, living in the same house just another grade older.  After school activities have taken our chill summer nights away and we are anticipating the homework to come trickling in to add to our now more full to do list.  Oh, what happened to those preschool days where you just had to make sure they had a change of clothes and snacks.  My girls are now in third and seventh grade, and I remember from my now seventh grader...

Quinoa Pizza

Meal Time Monday [Autosaved]

My two favorite foods are Sushi and Pizza.  I can eat both anytime of day with anyone but since learning of my wheat allergy and lactose intolerance. I try to stay away from all wheat which has made eating pizza hard.  I’ve tried the cauliflower crust but I guess I didn’t wring it out enough (I’ve tried three time) but it takes a lot of time to make Cauliflower crust and it also turn out soggy.  When I discovered this Quinoa Crust recipe I was so excited. After a few tweaks I look forward to Pizza night every week.

This recipe is really easy and it’s only 4 major ingredients. There is no kneading or letting the dough rice and it’s a nice thick crunchy crust to hold everything you want to put on your pizza.

Quinoa is also a great source of iron and has many other benefits.

  • High Conten...

Lemon Coconut Protein Chia Pudding

Meal Time Monday [Autosaved]

LemonCoconut.ChiaPudding

It sounds good, right? Well it is absolutely amazing! I have been dabbling in Chia Seed flavors lately. One because it is so good; second it is really easy and third it will kill a sugar craving and leave you full and satisfied.  It’s the perfect snack, breakfast!  I’ve made some questionable flavor combinations but this one by far is the yummiest! I had to share.

Chia Seed is also very beneficial it is rich in fiber, omega-3 fats, protein, vitamins and minerals.  Some benefits of Chia seeds are:

  • Great for your Skin and Aging- it contains antioxidants that help accelerate skin repair and also inhibit skin from future damage.
  •  Great for digestion- Chia seed is very-high in fiber it is said to contain about 11 grams per ounce...

Chocolate Chick Cookies

Chocolate Chip (shhh Chickpea) Cookies

(This was adapted from Texanerin Baking) Although I am one smart cookie (ba duh dump) 😉 I would have never thought of this myself, BUT I just changed a few things, and I totally fooled the Lil Divas. I haven’t baked for awhile it’s been hot, busy with school, kids, and life and ever since my Plant Based Reboot, I haven’t had a sweet tooth. That is saying something because I had a serious sweet tooth before we needed to have a sweet, indulgent dessert every night but ever since my “cleanse” which I hate even to call it that I have been pretty good on the cravings. So, when I pulled out these delicious cookies the “oo’s” and “ah’s” from the oil divas!! They smell delicious, they look delicious but do they taste delicious?

Yes! I made two batches! P...

Yum, PattyPan

Meal Time Monday [Autosaved]

PattyPan

Have your seen a Patty Pan before?

Have you ever tried Pattypan? It was completely foreign to me until a week ago; I received PattyPan in my Produce Co-Op, and it’s vibrant colors and cute bell-shaped immediately appealed to me. I did my usual Pinterest Research and found some recipes, but when it came down to it, I ended up mixing some things in the kitchen and coming up with a yummy dinner option. Pattypan has a lot of aliases: known as the flying saucer, cymling, scalloped, custard, or sunburst squash. It comes in a variety of colors too such as white, green and yellow. It size ranges in diameter but it typically about the size of your palm. The smaller Pattypans are more tender than, the larger, and its flavor is described as butter or olive oil like flavor...

National Ice Cream Day Tease

Yesterday was National Ice Cream day which was bittersweet! Oh, how I would love to indulge in a Butter Pecan IceCream Sundae with Wet Walnuts, and Caramel Syrup.  (Imagine me Homer Simpson drooling) But that is no longer the case for me.  After many years suffering from digestive issues I have found the culprits are Dairy Products and Wheat Products through the process of elimination and an prick allergy test. Can I tell you how much that STINKS?  I love dairy things cheese especially but all inclusive to yogurt and of course ice cream.  I could do without a glass of milk which my mom used to make me drink every morning before school, and I would complain because I told her it made me feel stick to my stomach...
