How were you the first week of school? Quinoa Pizza

My two favorite foods are Sushi and Pizza.  I can eat both anytime of day with anyone but since learning of my wheat allergy and lactose intolerance. I try to stay away from all wheat which has made eating pizza hard.  I’ve tried the cauliflower crust but I guess I didn’t wring it out enough (I’ve tried three time) but it takes a lot of time to make Cauliflower crust and it also turn out soggy.  When I discovered this Quinoa Crust recipe I was so excited. After a few tweaks I look forward to Pizza night every week.

This recipe is really easy and it’s only 4 major ingredients. There is no kneading or letting the dough rice and it’s a nice thick crunchy crust to hold everything you want to put on your pizza.

Quinoa is also a great source of iron and has many other benefits.

It sounds good, right? Well it is absolutely amazing! I have been dabbling in Chia Seed flavors lately. One because it is so good; second it is really easy and third it will kill a sugar craving and leave you full and satisfied.  It’s the perfect snack, breakfast!  I’ve made some questionable flavor combinations but this one by far is the yummiest! I had to share.

Chia Seed is also very beneficial it is rich in fiber, omega-3 fats, protein, vitamins and minerals.  Some benefits of Chia seeds are:

Have you ever tried Pattypan? It was completely foreign to me until a week ago; I received PattyPan in my Produce Co-Op, and it’s vibrant colors and cute bell-shaped immediately appealed to me. I did my usual Pinterest Research and found some recipes, but when it came down to it, I ended up mixing some things in the kitchen and coming up with a yummy dinner option. Pattypan has a lot of aliases: known as the flying saucer, cymling, scalloped, custard, or sunburst squash. It comes in a variety of colors too such as white, green and yellow. National Ice Cream Day Tease

Yesterday was National Ice Cream day which was bittersweet! Oh, how I would love to indulge in a Butter Pecan IceCream Sundae with Wet Walnuts, and Caramel Syrup.  (Imagine me Homer Simpson drooling) But that is no longer the case for me.  After many years suffering from digestive issues I have found the culprits are Dairy Products and Wheat Products through the process of elimination and an prick allergy test. YES! They are gluten-free YES! They are moist and YES! They are yummy, kid tested and approved. Have you ever wanted to try something different just to see what the hype is all about? Not all the time but sometimes I just want to see what all the fuss is about.  That’s what happened with these brownies I made them to see, “Can Black Beans really turn into brownies?” Not only can they but they really do taste very good.  Of course like most things I had to put my own spin on the ingredients and how to make them but they wouldn’t be my recipe if I didn’t.

Happy Independence Day!  Are you planning on attending a Barbecue today? Will there probably be Watermelon served? Have you been told that if you eat the Watermelon Rind, it will make you sick? Well, I am a living testament that is a myth. People toss the watermelon when it gets to the crunchy white part of the watermelon, but this is probably the most nutritious part of the fruit. The entire watermelon from flesh to seed is edible and delicious. I prefer the rind over the pink flesh, but I am not your typical person.

One of the things I love about summer is the fruit. I like cherries because they’re so juicy, ripe, and I can get them local than buying them in the store. I am privileged to live in the Garden State and in an ideal location. I am 20 minutes from a lake, 10 minutes from a farm, 45 minutes from the Jersey Shore and 10 minutes from Philadelphia in a great little suburb town in South Jersey. If I was into the mountains, which as of now I am not a hiking kind of girl I can be in the Poconos in about 2 hours.
