Lemon Coconut Protein Chia Pudding

Meal Time Monday [Autosaved]

LemonCoconut.ChiaPudding

It sounds good, right? Well it is absolutely amazing! I have been dabbling in Chia Seed flavors lately. One because it is so good; second it is really easy and third it will kill a sugar craving and leave you full and satisfied.  It’s the perfect snack, breakfast!  I’ve made some questionable flavor combinations but this one by far is the yummiest! I had to share.

Chia Seed is also very beneficial it is rich in fiber, omega-3 fats, protein, vitamins and minerals.  Some benefits of Chia seeds are:

  • Great for your Skin and Aging- it contains antioxidants that help accelerate skin repair and also inhibit skin from future damage.
  •  Great for digestion- Chia seed is very-high in fiber it is said to contain about 11 grams per ounce...

Chocolate Chick Cookies

Meal Time Monday [Autosaved]

Chocolate Chip (shhh Chickpea) Cookies

(This was adapted from Texanerin Baking) Although I am one smart cookie (ba duh dump) 😉 I would have never thought of this myself, BUT I just changed a few things, and I totally fooled the Lil Divas. I haven’t baked for awhile it’s been hot, busy with school, kids, and life and ever since my Plant Based Reboot, I haven’t had a sweet tooth. That is saying something because I had a serious sweet tooth before we needed to have a sweet, indulgent dessert every night but ever since my “cleanse” which I hate even to call it that I have been pretty good on the cravings. So, when I pulled out these delicious cookies the “oo’s” and “ah’s” from the oil divas!! They smell delicious, they look delicious but do they taste delicious?

Yes! I made two batches! P...

National Ice Cream Day Tease

Yesterday was National Ice Cream day which was bittersweet! Oh, how I would love to indulge in a Butter Pecan IceCream Sundae with Wet Walnuts, and Caramel Syrup.  (Imagine me Homer Simpson drooling) But that is no longer the case for me.  After many years suffering from digestive issues I have found the culprits are Dairy Products and Wheat Products through the process of elimination and an prick allergy test. Can I tell you how much that STINKS?  I love dairy things cheese especially but all inclusive to yogurt and of course ice cream.  I could do without a glass of milk which my mom used to make me drink every morning before school, and I would complain because I told her it made me feel stick to my stomach...

Black Bean Brownies (Kid and Husband Approved)

Meal Time Monday [Autosaved]

BlackBeanBrownies

Trying something new!

YES! They are gluten-free YES! They are moist and YES! They are yummy, kid tested and approved. Have you ever wanted to try something different just to see what the hype is all about? Not all the time but sometimes I just want to see what all the fuss is about.  That’s what happened with these brownies I made them to see, “Can Black Beans really turn into brownies?” Not only can they but they really do taste very good.  Of course like most things I had to put my own spin on the ingredients and how to make them but they wouldn’t be my recipe if I didn’t.

I live in New Jersey also known as the garden state and for the last three years, I have had a Spring, Summer, Fall garden that is getting larger with every year. We have a small backyard, and I am either going to have to move to some acres or just forget to let the kids play and take the whole yard for my garden. I never thought I would be the type of girl to garden, but it has taught me patience. I usually start my seeds in the winter end of January indoors and by Mother’s Day, they are ready to be planted. Usually around now is where I am reaping my rewards. My herbs are first like my oregano and basil that I use in this recipe and then my tomatoes. This year I have four varieties all heirloom tomatoes. I cannot wait for more garden to table meals to come from them...

Lately, all I have been posting is recipes and this blog is about food but not exclusively.  It’s just been a very busy season lately. With spring my little diva’s are in sports like lacrosse which are a huge time commitment. and I went back to school to get my second degree in Fitness and Exercise Science and Advanced Personal Training which is a big time commitment.I have a toddler which is a big time commitment. Needless to say my thoughts, although I still have them have been fleeting and I have no time to capture them and post but I am working on it.   I still have time to dabble in the kitchen though and recipes are just easier to post then thought provoking inspirational post...

No Carb Cheesecake

My Full Disclosure Policy

No Carb Cheesecake

I have been carb cycling for 3 weeks this month and if you have been following have found some yummy recipes. I am actually in love with this type of meal plan now. I have found that it has given me amazing results, physically and internally. The first week I had to tweak my macros, meaning the amount of protein, fats and vegetables/fruits that I consumed and types.  Once I figured it out not only have I felt better than ever, I find myself eating more than ever. Yet, I am eating less calories and low carbs.  I have played with my meal plan schedule varying week to week.

For example, my first week I ate:

Low Carb, Low Carb, No Carb, Low Carb, No Carb, Low Carb, High Carb. I did this to ease me into this new lifestyle change.

The Second week, I started off wit...

Oeey Goey Cheerio Brownies Gluten Free

CheerioBrownie

I think some of the yummiest things are created when you don’t have all the necessary ingredients. That is what happened here. My middle daughter had requested dessert and I totally forgot about it. So, when she came home from school she immediately asked, “So, Mom what did you make for dessert?” I had promised her and didn’t want to disappoint her so I pulled out my go to, brownies.  I have this easy brownie recipe that I have been making for years. Its one of those ones you have memorized to heart and use it in a pinch.  If I forgot bible study treat or something to send in with the girls its my go-to but this time was different. I have been diligent about being eating gluten free and I knew if I made brownies that I was going to not only want to taste one but definitely indulge.

My b...
