Butternut Squash and Spinach Latkes

I love trying new things and also using what I have in the kitchen. The other day I was thinking about my friend and her amazing latkes and was inspired. I had some Butternut Squash that I really needed to use and always have Spinach. With a little imagination these latkes was born. They were tasty and hit the spot, packed with Vitamins and Nutrients and fat loss friendly. Butternut Squash is great sweet or savory because of it’s mild taste so it’s now a new tasty recipe of mine.

Butternut Squash and Spinach Latkes

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

Yield: 3

Serving Size: 1

Butternut Squash and Spinach Latkes


  • 1c. Roasted Butternut Squash
  • 1/2 c. Spinach, chopped
  • 1/4 onion, grated
  • 2 cloves garlic, minced
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 2 tbsp. oat flour
  • 1 tbsp. cilantro
  • 1 egg


  1. Mix all
  2. Grease a cookie sheet pan with coconut oil or 1 tsp of olive oil per latke in a frying pan.
  3. If frying, fry on both sides on low-medium heat for 5-10 minutes.
  4. If baking let bake for 30 minutes until golden brown.
  5. Cool for 5 minutes and serve
